Pancakes!
/ Ella BlackwellBreakfast has to be my favourite meal of the day, so many options so many flavours. These pancakes are inspired by a simple Sri Lankan recipe, they have a refreshing island vibe. They were my son’s favourite treat as a baby, and work well with Blueberries added to the mixture.
This is a super simple recipe. The whole family can get involved with banana mashing and egg breaking, a tasty snack with no sugar. Swap in your favourite fruits; fresh or stewed, a berry coulis, add seeds, syrups, spices...the options are endless.

2 Eggs
Rice Flour

Large Pinch Ground Cardamon (optional)
-Mash the two bananas in an open bowl, whisk the two eggs in a separate bowl and add to banana mix.

-Slowly add coconut milk (and spice if using), whisking constantly, until you have a thick batter.
-Drop tbs of the mixture into a lightly oiled, pre-heated, frying pan. Cook for about 1 min on each side.
