Pancakes!

Breakfast has to be my favourite meal of the day, so many options so many flavours. These pancakes are inspired by a simple Sri Lankan recipe, they have a refreshing island vibeThey were my son’s favourite treat as a baby, and work well with Blueberries added to the mixture.

This is a super simple recipe. The whole family can get involved with banana mashing and egg breaking, a tasty snack with no sugar.  Swap in your favourite fruits; fresh or stewed, a berry coulis, add seeds, syrups, spices...the options are endless. 

Pancakes

2 Bananas

2 Eggs

Rice Flour

1 tin Coconut Milk

Large Pinch Ground Cardamon (optional) 

-Mash the two bananas in an open bowl, whisk the two eggs in a separate  bowl and add to banana mix.

-Add the rice flour one tbs at at time. Mix with a fork until you have a very think mixture, but not a dough.

-Slowly add coconut milk (and spice if using), whisking constantly, until you have a thick batter.

-Drop tbs of the mixture into a lightly oiled, pre-heated, frying pan. Cook for about 1 min on each side.

Serve With

1 Large Mango

1 Lime

1 Passion Fruit

Yoghurt (of your choice)

1 Banana

Coconut Flakes

Honey

-Layer up your pancakes with sliced banana and Mango.

-Serve with yogurt, honey, coconut flakes, passion fruit and lime juice.
