Pancakes!
Breakfast has to be my favourite meal of the day, so many options so many flavours. These pancakes are inspired by a simple Sri Lankan recipe, they have a refreshing island vibe. They were my son’s favourite treat as a baby, and work well with Blueberries added to the mixture.
This is a super simple recipe. The whole family can get involved with banana mashing and egg breaking, a tasty snack with no sugar. Swap in your favourite fruits; fresh or stewed, a berry coulis, add seeds, syrups, spices...the options are endless.
